Heap the flour on the pastry board, forming a well, add the eggs, salt, sugar and softened butter to obtain a smooth and shiny dough. Roll out the dough to a thickness of 2–3 mm. Cut out squares large enough to wrap around an apple.
Partially bake the apples and then peel and core them. Select one apple for each pastry square. Fill the hole in the apple with a little sugar and butter, then tuck up each of the corners of the square and seal it on top by pressing with your finger tips.
Place the apples on a greased baking sheet and bake in a hot oven until golden.
Sprinkle with icing sugar.
