Brown the chopped onion and add the rice and stock; shortly before cooking is complete, add the white wine, cheese, cinnamon and cooked and cubed apples. The juice of the apples can be used to obtain the right consistency in the risotto.
As an alternative, try green apple risotto, adding spinach as well as the apples.
