Plum Gnocchi
    Ingredients:
    8 floury potatoes, 2 eggs, 300 g flour, butter, breadcrumbs, plums.
    Boil the potatoes in their jackets, peel them and mash them while still hot; add the flour, eggs, and a pinch of salt. Work the mixture with your hands until it’s soft and smooth, then shape it into a large 4 cm diameter roll. Cut this into 2 cm thick discs. Put a half plum into each disc and close it up, making a medium size dumpling. Cook in salted water.
    User butter to brown plenty of breadcrumbs in a pan, add the gnocchi and turn them gently until they are coated with the breadcrumbs. Serve with melted butter.
