1 loin of pork, flour, 1 diced onion, 1 diced carrot, 1 diced celery stick, 60 g butter, 2 dessert spoons of Riva del Garda extra virgin olive oil, 1 glass of dry white wine, 4 Golden Delicious apples, salt and pepper to taste
Sauté the celery, carrot and onion in the oil and half the butter in a high-sided frying pan. Flour the loin of pork and add it to the other ingredients in the pan. Turn the meat to ensure even browning, baste it with the white wine and allow the wine to evaporate.
Add a few apple slices, season to taste with salt and pepper, and cook over a low heat for about 10 minutes.
Slice the pork and place it on a serving dish; strain the remaining ingredients, re-heat the liquid obtained in the pan and pour it over the meat; fry remaining slices of apple in a little butter and arrange them around the sliced pork to serve.
