Savoury barley with Granny Smiths
    Serves 6 :
    2 Granny Smith apples; 1 kg barley; 1 scallion; 1 litre dry white wine; Riva del Garda extra virgin olive oil; beef stock; salt to taste (cooking time c. 45 min.)
    Leave the barley to soak overnight. Peel the apples and cut into thin slices. Sauté the finely chopped scallion in olive oil and add the apple slices.

    Add barley and sauté until all of the oil has been absorbed then add the wine. Boil off wine and cook until tender, adding beef stock as needed to keep moist.
