Apple fritters
Serves 4:
3 apples, 2 eggs, 50 g cornstarch, 50 g white flour, milk, sugar, butter, oil, rum, cinnamon, lemon rind, 1 teaspoon of dried yeast powder.
Peel and core the apples, then cut them across to obtain a number of rings. Place them on a dish and sprinkle them with rum, sugar, grated lemon rind and leave for at least an hour.

Make a batter using the flour and the egg, first whisking the whites till fluffy, add a knob of melted butter, a pinch of salt and teaspoon of dried yeast powder. Dip the apple rings in the batter. Fry in boiling oil, sprinkle them in sugar and serve hot.
